I just discovered the
biscuits roses de Reims (...they inspired me some pictures
, before it was too late). It is customary to taste the biscuits with
champagne but I tried them with my midmorning coffee and they were perfect. The biscuits - pink-made by the addition of carmine to warm the dark colour of vanilla - were created around 1690 in Reims and they're still produced by the
Maison Fossier.
